Following his military service, Paul developed a successful career as an ASE Certified Mechanic, showcasing his dedication and skill in his craft. Paul's passions extended beyond his profession; he loved to play the guitar and often expressed himself through music, creating and sharing melodies that resonated with those around him. His love for cookies was well-known among family and friends, and he took particular delight in peaches, fondly recalling it as one of his last meals.
As a devoted father, Paul leaves behind five beloved children: Paul Gilbert Jr. of Cypress, Texas; Jessica Houston of Spring, Texas; Amanda Kasner of Fayetteville, Texas; Connie Gilbert of Nacogdoches, Texas; and Dana Ko of Knoxville, Tennessee. He also cherished his numerous grandchildren, who brought immeasurable joy to his life.
